Vittorio Capparelli-grand wine master, culinary historian:

It has taken 35 years of relentless research since I have taken to heart the study of Italy's cooking and its origins.

With the help of the Illustrious Academia Tecnica della Cucina Italiana, several books, and extensive travel, I have searched the archives and interviewed the savvy in the most remote villages ( utilizing all available time, shuttling through the 20 region's 101 provinces and clusters of homes from the peak of the Alps to the seas of Sicily and Sardinia).

Vittorio Eager to sample most of the dishes of past cultures and analyze texture and their spices along with the combination of ingredients, in order to pinpoint the treasured origin of the recipes," I've gained a few kilos with absolutely no regrets!"

Thus, putting together the biggest and most unusual collection of antique and contemporary dishes of 72 distinct cuisine of Italy, for which I have been fortunate to present successfully during the past years in this location and elsewhere prior to that.

Humbly I say that I do not know all of the cooking of Italy. With what I know, though, I will take you for an imaginary tour of the region's finest dishes, perfectly matched with the most praised D.O.C.G. wines wishing to awaken your memories to what Italian food really is!
